Guinness Bacon Cheeseburgers
2 lbs ground meat (I actually used a meatloaf mixture of beef, veal and pork, but obviously sirloin would be fine! 80/20)
2 Tablespoons Worcestershire Sauce
2 teaspoons Mustard (I used Grey Poupon)
1 teaspoon Garlic Powder
1 teaspoon Onion Powder
1 teaspoon Kosher Salt
1/2 teaspoon fresh cracked Pepper
1/2 teaspoon Liquid Smoke
1/2 teaspoon very finely chopped rosemary (optional and any other herb on hand would do ie: sage, parsley, thyme…)
1/2 cup Guinness
1 lb. Freshly cooked bacon
Creamy Irish Cheddar Cheese for topping (or cheese of choice)
Hamburger Rolls
Directions:
Mix all ingredients (minus last 3) together in a large bowl until just incorporated. Do not over work your meat.
Form desired sized hamburger patties. I made 6 large ones! Spray burgers on top with cooking spray to prevent sticking.
Preheat your grill to medium. (or cooking pan)
Place your burgers cooking spray side down and cook about 6 minutes per side (though cooking time will depend on how thick or thin you formed your patties.)
As the burgers cook on the grill, do not press down on them or move them around - rather let them sit there undisturbed, just being careful not to overly, “char” the sides. You’re looking for a slower cook as you want the inside of the burger to cook to doneness.
The last 3-4 minutes, place your cheese on top so it has time to melt - cover grill or cooking pan.
Remove burgers from gill and allow them to rest about 5 minutes.
Place bacon on top and offer additional toppings if desired. EAT WITH A GUINNESS! -
